Mathieu Choux arrived in Boise from Burgundy, France in 2001. He opened Le Café de Paris downtown, offering fresh croissants, breads, and a full daily dine-in menu. By popular demand from local restaurants, the Café expanded its wholesale baking options in 2006 to serve the local market. Mathieu closed the Café’s doors years later to focus solely on Gaston’s Bakery and serving much more of the Treasure Valley. The bakery is now located on the Bench and has developed into a national brand via countless community partners, food distributors, and Sur La Table.

• Your bread was baked fresh yesterday and shipped to you overnight! It is ready to consume now and will rest safely on your counter for up to 5 days, or a little longer in an airtight container or refrigerator.
• For freezing: If you prefer slices, slice the loaf prior to freezing for later convenience. Wrap slices or loaf in plastic wrap, tin foil, or a plastic bag. The key is to keep as much air as possible out of the package! Store in freezer for up to 3 months.
• For reheating from frozen: For slices, the slice(s) can be removed from the freezer, thawed at room temperature and toasted to desired quality. For the whole loaf, the loaf may be thawed at room temperature and heated to toast or can be removed from packaging and baked from 30 minutes at 350F directly from frozen.
